A nourishing Costco dinner for busy nights when you want something quick, warm, and genuinely delicious

There are certain meals that instantly earn a spot in the weekly rotation—and this was one of them.
As a busy mom, I’m constantly looking for ways to save time while still serving meals that feel nourishing, warm, and satisfying for my family. And honestly? This Costco dinner completely surprised me in the best way.
This Mother’s Day season, I wanted to share meals that feel realistic for busy families. Meals that don’t require an hour in the kitchen or a long ingredient list to still taste delicious.
So when I found this pre-cooked marinated salmon paired with a veggie and quinoa side dish at Costco, I knew I had to try it.
And it ended up being one of the easiest dinners we’ve made in a while.
What I Used
- Pre-cooked marinated salmon from Costco
- Veggie + quinoa side dish from Costco
That’s it.


How I Made It
Step 1: Heat the Salmon
I removed the salmon from the plastic packaging and transferred it to an oven-safe baking dish along with all of the marinade.
Then I heated it according to the package instructions:
- Preheat oven to 375°F
- Bake for 12–15 minutes
Because the salmon is already cooked, you’re really just warming it through and letting all of the flavors come together.


Step 2: Heat the Garlic Veggies + Quinoa
For the veggie and quinoa side dish, I transferred everything into my Ninja Crispi air fryer.
I heated it using the BAKE setting for about 5 minutes until warm.


The Result
The entire dinner came together in about 10 minutes and tasted so much more elevated than the effort required.
The salmon was flavorful and tender, the quinoa and veggies made it feel balanced and filling, and best of all—we had leftovers.
The next day, the leftovers were perfect for:
- salmon salad
- veggie + quinoa omelettes
- an easy lunch bowl

Why I Loved This Meal
What I love most about meals like this is that they reduce the pressure of weeknight cooking.
Not every dinner needs to be completely homemade to still feel thoughtful, nourishing, and delicious.
