The 10-minute lunch I could genuinely eat every day of the week
There are certain lunches that feel realistic enough to actually make on a busy weekday — and this Mediterranean Crunch Salad Wrap has quickly become one of mine.
It’s fresh, crunchy, filling, takes less than 10 minutes to make, and requires almost no cooking at all.
Lately I’ve been leaning heavily on simple grocery shortcuts that still feel nourishing, and this Taylor Farms Mediterranean Crunch Salad Kit from Costco has been one of my favorite recent finds. It comes in a two-pack, which makes it perfect for quick lunches throughout the week.
To make this wrap, I simply:
- grabbed one of my favorite gluten free wraps from BFREE
- added the Mediterranean crunch salad mix
- sliced fresh avocado for extra creaminess
- wrapped everything up and served it with fresh mango on the side



That’s it.
The combination of the crunchy lettuce, herbs, feta, and creamy avocado makes this taste so much more elevated than the amount of effort required.
