A fast, fully veggie-based and toddler-friendly lunch or dinner using simple Trader Joe’s staples

- Trader Joe’s Vegan Italian Style Sausage-less Sausage
- Thai Sweet Ginger Sauce
- Oil (for cooking)
How to Make It (10 Minutes)
- Cook the veggies
Add a small amount of oil to a skillet over low to medium heat.
Add the veggie medley and let it cook, stirring occasionally. - Heat the rice
In a pot, add about ¼ cup water and 1 tablespoon oil.
Add the frozen brown rice, cover, and heat on low to medium until soft but still slightly firm. - Cook the sausage
In a separate skillet, heat oil and cook the vegan sausage over medium heat until warmed through and lightly golden on the outside. - Assemble your bowl
Add rice to a bowl, top with veggies, then slice the sausage into bite-sized pieces and layer on top. - Finish with sauce
