This pesto chicken pita pocket has quietly become one of those meals.
It’s made with a few Trader Joe’s staples, comes together in about 10 minutes, and somehow tastes like something you’d order at a café for $14–$16.
Crispy chicken meatballs, creamy whipped feta, and that kale cashew pesto layered into a warm pita pocket—it’s simple, filling, and just elevated enough.
And the best part?
It works whether you’re feeding yourself… or everyone.
🥙 10-Minute Pesto Chicken Pita Pocket (Air Fryer Edition)
Serves 3–6
Ingredients:
- Whole wheat pita
- Trader Joe’s chicken meatballs
- Trader Joe’s kale cashew pesto
- Trader Joe’s whipped feta spread
- Lettuce of choice





Instructions:
- Cook the meatballs
Place chicken meatballs in the air fryer and cook for about 6 minutes (or according to package instructions). - Prep the pita
Cut the pita in half, then slice along the edge to create a pocket. - Layer the base
Spread about 1 tablespoon of whipped feta inside the pita. - Add flavor
Spread 1 tablespoon of kale cashew pesto over the feta. - Add greens
Stuff with lettuce for a fresh crunch. - Assemble
Cut 2–3 meatballs in half and tuck them into the pita. - Serve warm
That’s it—done in under 10 minutes.
Toddler-Friendly Serving (Deconstructed Version)
For a more toddler-friendly version, I like to serve this deconstructed—same ingredients, just simplified:
- Add 2–3 meatballs (cut in halves) to a plate or bowl
- Take the pita and smear with pesto or whipped feta, then cut into strips
- OR add 1 tablespoon of pesto + 1 tablespoon of whipped feta directly to the plate for dipping
It turns into a little “build your own” moment, which toddlers tend to love—and it lets them explore flavors at their own pace.
