A quick, filling, budget-friendly meal for busy moms who don’t have time to overthink lunch
If you only have 15 minutes… this is what I make
Most days, I’m making my lunch during my daughter’s nap time.
And if I’m lucky, I have about 40 minutes… but realistically, I try to keep everything under 15 minutes in case she wakes up and needs me.
So my lunches need to be:
- Fast
- Filling
- Made with what I already have
This creamy spinach lentil chickpea wrap has become one of my go-to meals in this season.
It costs about $3–$4 to make, takes 10 minutes, and honestly feels like something I’d order at a café for triple the price.



Why This Wrap Works

Ingredients (Trader Joe’s)
- Steamed Lentils
- Balela (chickpea salad)
- Vegan Tzatziki Dip
- Spinach (or lettuce of choice)
- Whole Wheat Lavash Wrap





Instructions (10 Minutes Total)
1. Warm the base
Add about 1 cup of lentils and 3 tablespoons of balela to a microwave-safe bowl.
Heat for 1 minute and 15 seconds.
2. Mash + mix
Gently mash the mixture until it becomes chunky but spreadable—similar to an olive tapenade.
3. Make it creamy
Add 1 tablespoon of vegan tzatziki and mix until combined.
4. Assemble
Spread onto your lavash wrap and add a small handful of spinach.
5. Wrap + slice
Roll it up, slice in half, and enjoy.

Even though the total grocery cost is about $12, each wrap comes out to:
