A high-protein, 5-minute lunch that feels filling, flavorful, and not heavy
If you’ve seen my other video, then you already know—I love the Greek-style chicken salad from Trader Joe’s.
It’s one of those easy, flavorful options that feels like a complete meal without requiring any effort.
But I also love a good challenge.
So I decided to recreate it at home—with my own twist—using one of my favorite ingredients: Greek yogurt instead of mayo.
And honestly?
This turned out so good.
It’s creamy, salty, a little tangy, and most importantly—it feels filling, nutritious, and not heavy.

🥗 The Recipe (My Version)
Ingredients:
- 1 cup white meat chicken (chopped or cubed)
- 1–1.5 cups plain 0% Greek yogurt
- 1 tbsp marinated sun-dried tomatoes, chopped
- 1 tsp capers + a splash of the brine
- 1 tbsp chopped Kalamata olives
- 1 tbsp chopped marinated artichokes
- 1/2 tsp salt
- Pinch of pepper (to taste)
Instructions:
- Add all ingredients to a bowl.
- Mix until everything is well combined and creamy.
- Taste and adjust seasoning if needed.
- Optional: Let it chill for 15–20 minutes for even better flavor.
🛒 Trader Joe’s Shopping List
If you want to recreate this exactly, here’s what to grab:
- Cooked white meat chicken (or rotisserie chicken)
- Plain 0% Greek yogurt
- Sun-dried tomatoes (in oil)
- Capers
- Kalamata olives
- Marinated artichokes
- Spinach or lettuce
- Whole wheat lavash wrap
🥙 How I Eat It (My Go-To)
This is where it becomes a true in-a-pinch meal:
- Warm up a whole wheat lavash wrap
- Add 1–2 tablespoons of the chicken salad
- Sprinkle spinach or lettuce
- Wrap and enjoy ✨
It’s quick, satisfying, and something I actually look forward to eating.
✨ Why This Works
This recipe has been on repeat for me because it checks every box:
- High protein → keeps me full
- Quick to make → under 5 minutes
- Simple ingredients → most are already pre-marinated (aka built-in flavor)
- Lighter swap → Greek yogurt instead of mayo
It’s one of those meals that feels like you tried… without actually trying.
💭 Final Thoughts
This is exactly the kind of meal I lean on right now—something that fits into the margins of motherhood, doesn’t require overthinking, and still feels put together.
Very dressed enough, but for food.
If you make this, let me know what you think—I’d love to hear if you tweak it or make it your own.
