The Kind of Meal You Make When You Didn’t Plan Anything

This is one of those meals that came together simply because I opened my fridge and started pulling things out.
No recipe. No prep ahead of time. Just real ingredients that work well together.
It’s quick, filling, and relies on one of my favorite shortcuts: pre-marinated baked tofu. It skips a whole step while still delivering flavor—something I lean on often in this season of life.
This is me proving you don’t need expensive or a lot of ingredients to make a hearty, flavorful, or nutritious meal—you just need one ingredient to carry the dish (in this case, the marinated tofu), and some vegetables you have easy access to.
Often, what’s already in your fridge or freezer is more than enough.
This is what “dinner in a pinch” looks like.

Ingredients
- 1 package baked tofu (pre-marinated, cubed)
- 1–2 cups broccoli, chopped
- 1 cup cherry tomatoes, halved
- 1 bag frozen rice (any variety)
- 1 teaspoon water
Optional (but recommended):
- Thai Sweet Ginger Sauce (my pick!)
- Soy sauce or coconut aminos
- Sweet chili sauce or teriyaki
- Sesame seeds
Instructions
1. Prep your ingredients
Start by chopping your vegetables and cubing the tofu.
I used broccoli and tomatoes because that’s what I had—but this works with almost anything in your fridge.


2. Air fry the tofu + veggies
Add the tofu and vegetables directly into your air fryer basket.
Cook on air fry at 375°F for 10 minutes, or until the edges start to crisp slightly.
No oil needed—the tofu already has flavor built in.
3. Heat the rice
While everything is cooking, add your frozen rice to a pot with 1 teaspoon of water.
Heat on low to medium, stirring occasionally until warmed through.
4. Assemble your bowl
Add the rice as your base, then top with the tofu and veggies.
Finish with your favorite sauce or keep it simple—it works both ways.

No overthinking required.
