Why You’ll Love This Recipe
If you’re in a season where meals need to be:
- Fast
- Filling
- Require zero mental energy
This sandwich checks every box.
It feels a little elevated (pretzel bun + honey dijon 🥨✨), but it’s made with just a few simple ingredients — most of which you can grab in one quick Trader Joe’s run.
And the best part?
You can make it in just a few minutes using my go-to: the Ninja Crispi Air Fryer — it’s what I use almost daily for quick lunches like this.

Ingredients
- 1 pretzel bun (Trader Joe’s)
- Chicken breast bites with honey dijon mustard
- Organic shredded 3-cheese blend
Optional side:
- Green grapes (highly recommend for that sweet + salty combo)
Instructions
Step 1
Slice the pretzel bun in half lengthwise and lay it flat.
Step 2
Add shredded cheese to one side of the bun.
Step 3
Open the chicken breast bites and honey dijon sauce.
Place about 4 large chicken pieces on top of the cheese.
Step 4
Place in the air fryer on RECRISP for 3 minutes.
I use my Ninja Crispi Air Fryer for this — it melts the cheese perfectly, warms the chicken through, and gives the bun just the right amount of toast without drying it out.
Step 5
Carefully remove (it will be hot).
Step 6
Spread the honey dijon sauce onto the top bun.
Step 7
Close the sandwich, slice if desired, and enjoy.
What Makes This So Good
It’s all about balance:
- salty + chewy pretzel bun
- creamy melted cheese
- savory chicken
- sweet, tangy honey dijon
And paired with grapes?
It turns into one of those simple meals that feels complete.

Why I Love Using the Ninja Crispi
The Ninja Crispi Air Fryer has become one of my most-used kitchen tools in this season of life.
I reach for it because:
- it heats up fast
- it’s perfect for small, quick meals
- it makes food feel fresh (not microwaved)
- and it saves me time when I’m juggling everything else
If you’re someone who relies on quick, realistic meals — it’s one of those tools that just makes life easier.
Make It Your Own
- Add arugula for freshness
- Swap cheese based on what you have
- Use any bread if you don’t have a pretzel bun
This is one of those “use what you have” recipes that still works every time.

A Note on This Season of Life
Lately, I’ve been leaning into meals like this —
quick, nourishing, and realistic.
Not everything needs to be complicated to be good.
Sometimes it’s just:
10 minutes, 3 ingredients, and something warm on your plate.
